Chocolate Pudding
One of the first things I was tasked with ‘cooking’ was chocolate pudding from a box. I don’t know how old I was – I just remember feeling really put out at how much stirring was involved.
Eventually I graduated to making pudding from scratch – and wondering why my younger self thought a few minutes of stirring was such a big deal.
Chocolate Pudding
1/2 c sugar
2 T cornstarch
1/3 c cocoa powder
1/8 t salt
2 c milk
2 egg yolks
2 t vanilla
Mix sugar, cornstarch, cocoa powder and salt in a medium saucepan. Beat egg yolks and combine with the milk. Gradually stir the milk and egg yolk mixture into dry ingredients.
Cook over medium heat, stirring constantly until the mixture thickens and boils. Boil for one minute.
Remove from heat and stir in vanilla. Pour into serving dishes, cook and chill.
