Hot Cocoa Mix

Today is the solstice: the first official day of winter and the shortest day of the year for those of us in the Northern Hemisphere. Oddly enough, we’re expecting temperatures in the low 60s, but we’ve had the occasional snow storms already, and it won’t be long before another one is headed our way.

Not that I need a snow storm to warm up with a mug of hot cocoa. I’ve been known to drink it in the summer if the mood strikes me. But there’s no denying it’s especially nice on a cold, dark, winter’s day, and with this easy mix on hand, it’s ready in no time – which is an added bonus when I’m in a hurry to get out the door to work!

I have tried making it with volume measurements, but I find it’s easier and more accurate when I measure by weight. As always, use your favorite ingredients and brands, and adjust the ratios to achieve the level of sweetness you prefer.

Hot Cocoa Mix

Jar and spoon of hot cocoa mix

4 ounces sugar

2 ounces cocoa powder

1/4 teaspoon salt

Add all ingredients in a jar and stir to mix.

Add two rounded teaspoons to a mug of hot milk.
