Oatmeal Cookies

These are my current favorite cookies to make. I usually make them with chocolate chips, but other options would be good as well.
Oatmeal Cookies
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup white sugar
- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups quick cooking oats
Combine the dry ingredients, and set aside. In a separate bowl, beat the butter and sugar. Beat in the eggs and vanilla. Add the dry mixture to the wet mixture, then stir in the oats.
Chill for at least an hour to reduce spreading
Bake at 375 degrees F (190 degrees C) about 8-10 minutes, or until the edges are golden brown and the centers are nearly set.
Cool on the baking sheet for 5 minutes, then transfer to a wire rack
